Greetings from Iowa Decorative Painters

From Randi Lincoln, editor.

Hope everyone had a great Xmas Holiday!!

This is a recipe from Leah that she brought to the Angel class last July.  Very good!

HEALTHY BANANA BREAD

1/2 cup oleo

1 1/2 cups sugar

2 eggs

1/2 cup lowfat cottage cheese, small curd

1 tsp. soda

3/4 tsp. salt

1 cup mashed bananas

2 cups flour

1/2 cup chopped walnuts

Preheat oven to 350 degrees.  Grease loaf pan.

Beat together oleo, sugar, eggs, cottage cheese.  Add mashed bananas.

Add soda & salt to flour, beat flour mixture into first mixture two minutes.

Stir in walnuts.

Pour into prepared pans.  Bake 50 minutes until toothpick in center

comes out clean.

You can also use 2 - 8" cake pans, bake 40 minutes.

Freeze two over-ripe bananas.  They will be liquidy and easy to use.  I

always have some ready to go.  I use 2 large bananas even if they

make more than 1 cup mashed.

Memory Box information from DJ:

The Memory Box program seems to be taking a back seat for the last year or so.  They are not requested near as much as they used to be.  I think I have given out less than half what used to be given out.  I put a number of 67 on this year's deliveries.  Mostly to Mercy and Methodist.
